Delicious Salad Dressings
I prepare extra of both recipes to keep in the fridge. It allows my summer salad to be prepared quicker and easier. ENJOY!
Caeser Vegan Salad Dressing Courtesy of: PCC Markets in Washington State
Ingredients:
1 cup Vegenaise (I prefer the no soy)
1/4 cup organic lemon juice
2 tablespoons vegan Worcestershire sauce
4 teaspoons minced organic garlic
1 tablespoon sherry vinegar
1 1/2 teaspoons organic dijon mustard
1 1/2 teaspoons organic black pepper
1/2 cup organic olive oil
Procedure:
Place all the ingredients, except oil, in a food processor
Blend until combined
With the food processor running, slowly add oil to emulsify

Yield: approximately ½ cup
Ingredients:
¾ teaspoon minced garlic (optional)
1 ½ teaspoons dijon style mustard
3 tablespoons balsamic vinegar (can substitute sherry vinegar)
¾ teaspoon salt
1 ½ tablespoons maple syrup (I use less maple syrup)
4 ½ tablespoons extra virgin olive oil
Freshly ground pepper to taste
Note: Can add fresh basil, oregano, parsley etc.
Procedure:
In medium mixing bowl, combine garlic, mustard, vinegar, salt and maple syrup
Gradually whisk in olive oil
Adjust salt & pepper to taste
