Delicious Salad Dressings

I prepare extra of both recipes to keep in the fridge. It allows my summer salad to be prepared quicker and easier.  ENJOY! 

Caeser Vegan Salad Dressing Courtesy of: PCC Markets in Washington State

Ingredients:

  • 1 cup Vegenaise (I prefer the no soy)

  • 1/4 cup organic lemon juice

  • 2 tablespoons vegan Worcestershire sauce

  • 4 teaspoons minced organic garlic

  • 1 tablespoon sherry vinegar

  • 1 1/2 teaspoons organic dijon mustard

  • 1 1/2 teaspoons organic black pepper

  • 1/2 cup organic olive oil 

Procedure:

  1. Place all the ingredients, except oil, in a food processor  

  2. Blend until combined

  3. With the food processor running, slowly add oil to emulsify

Yield: approximately ½ cup

Ingredients:

  • ¾ teaspoon minced garlic (optional)

  • 1 ½ teaspoons dijon style mustard

  • 3 tablespoons balsamic vinegar (can substitute sherry vinegar)

  • ¾ teaspoon salt

  • 1 ½ tablespoons maple syrup (I use less maple syrup)

  • 4 ½ tablespoons extra virgin olive oil

  • Freshly ground pepper to taste

  • Note:  Can add fresh basil, oregano, parsley etc.

Procedure:

  1. In medium mixing bowl, combine garlic, mustard, vinegar, salt and maple syrup 

  2. Gradually whisk in olive oil

  3. Adjust salt & pepper to taste
